In general, bishops score better, statistical data suggests it. But when the knights have good squares where they are protected by own pawns, then it is not a big thing. Also, other factors play a role, for example in this game black controlled the center and had the initiative, so white had not the time to slowly place his pieces better.
Bishops are better than knights in a position where the knights cannot find outposts in the center (open positions). Here the knights were able to find good homes and Gelfand's dark square bishop couldn't relax. Also white lost the initiative somewhere along the way and allowed strong counterplay in the center from Black.
